Friends, I can't even believe it's already November. I mean, where did fall go?? I woke up this morning to snow softly falling and although it melted as soon as it hit the ground, the mountains I can see from my kitchen window are covered in snow - a sure sign that winter is just around the corner!!
It's kind of funny, having just moved overseas to Europe life feels a little bit upside down this fall but I'm actually getting more and more excited for winter by the day. Being a Canadian prairie girl at heart I'm very much looking forward to winter in the Carpathian mountains which comes with (hopefully) lots of snow, milder temperatures than I'm used to, and lots and lots of skiing (although with 2 kids under 5 I don't actually know how much skiing I'll be doing...). And of course, with the winter season that's coming oh so quickly also comes the holiday season!
Our family is pretty casual and laid back when it comes to the holidays and we will be even more so this year now that we're away from home, but I always love cooking at this time of year, something I know won't change even though we're on the other side of the world. The holidays are a time when I bring out those old, tested-a-million-times recipes that everyone loves and create delicious comfort dishes, like these Maple Rosemary Roasted Sweet Potatoes. My husband absolutely adores sweet potatoes and since we got married I've probably prepared them a hundred different ways, but this way is hands down my favourite way to enjoy them.
Being Canadian generally means you love anything slathered in real maple syrup, and sweet potatoes are absolutely no exception. Don't even think about pulling out the Aunt Jemima pancake syrup here...this recipe calls for the real deal Canadian maple syrup and trust me, it will make or break this dish. These sweet potatoes are crispy on the outside, soft and chewy on the inside, and sweet with a beautiful rosemary flavour. Our family just loves this recipe, and I know yours will too!!
Maple Rosemary Roasted Sweet Potatoes (serves 8-10)
5 medium sweet potatoes, washed, peeled and cut into 1-inch chunks
4 tablespoons good quality olive oil
1 tablespoon dried rosemary leaves (use fresh if you want, but dried ones work well too)
1/3 cup real maple syrup
sea salt and pepper to taste
Preheat your oven to 450 degrees Fahrenheit.
Add the olive oil to a large rectangular baking dish.
Add the sweet potato chunks and dried rosemary and toss until the sweet potato chunks are well coated.
Drizzle the maple syrup over the sweet potato chunks and bake at 450 degrees Fahrenheit for about 20 minutes, or until the sweet potato chunks are soft enough to be pierced by a fork.
Serve as a side dish alongside your favourite roasted chicken or turkey, ham, or any other holiday main dish.
Roasting sweet potatoes at a high heat gives them a beautiful crispy exterior and a soft interior. And you just can't beat the flavour of this dish!
