I don't know about you, but I am getting quite excited for all the upcoming holiday gatherings and it has me thinking about appetizers! I've mentioned before that our Christmas Eve tradition has always been an appetizer buffet and it's one of those traditions that I look forward to the most - it's so fun making bite-sized treats and because it's the holidays it's always appropriate to go for the more decadent ingredients, which I don't mind one bit!

I've been making this Apricot Pecan Baked Brie Appetizer for about 10 years and it makes its way onto our Christmas Eve appetizer buffet table almost every year. With rich, nutty flavours and all the sweetness of apricot it's the perfect savoury treat for the holidays - not to mention the fact that the colours are gorgeous AND it's SO easy to make! And for the last several years I've appreciated it for an entirely different reason: my kids hate it!! It must be the strong, distinct flavour of Brie that my kids have an aversion to (of course, they're only 4 and 2 years old so it's understandable) but in any case, my kids won't go near the stuff. So of course I keep making it because, well...cheese.

But in all seriousness there's really nothing wrong with reserving those extra rich and delicious recipes for adult-only gatherings and in our family, this is definitely one of those recipes. And I'm not going to pretend that I'm at all posh or sophisticated...not even a little bit. In fact, I spend the majority of my time in yoga pants, usually with someone's saliva or mucus smeared on my shirt (I'm a stay-at-home-mom of preschoolers, what can I say?). But if the party I'm hosting calls for my nice skinny jeans or even, heaven forbid, a pair of pantyhose and a skirt, then this Apricot Pecan Baked Brie Appetizer is definitely going to be on the menu. After the kids are in bed, of course.

prep time: 10 minutes cook time: 10-15 minutes total time: 25 minutes

Apricot Pecan Baked Brie Appetizer (serves 4-8)

INGREDIENTS:

  • 250 gram round high-quality Brie cheese
  •  1 small red onion, diced
  •  1/2 cup apricot jam
  •  1/3 cup chopped pecans
  •  1 baguette, sliced
  •  olive oil for brushing (approximately 2 tablespoons)
  •  a pinch of sea salt

INSTRUCTIONS:

  1. Preheat your oven to 375 degrees Fahrenheit.
  2.  Prepare a baking sheet with parchment paper and set it aside.
  3.  In a bowl, combine the diced red onions, apricot jam, and chopped pecans.
  4.  Slice the Brie in half, placing one half rind-side down in the middle of the baking sheet. Top the first half with half of the apricot and pecan mixture, add the second half of the Brie rind-side up and top with the remaining apricot and pecan mixture.
  5.  Place the baguette slices around the Brie, brush them with some olive oil and sprinkle them with a pinch of sea salt.
  6.  Bake the Brie for about 10-15 minutes, or until the cheese begins to melt slightly and the baguette slices turn a nice golden brown.
  7.  Serve the appetizer immediately right from the baking tray, or carefully transfer the Brie and baguette slices to a serving platter.
